Apple & Cinnamon Loaf


Great for the kid’s lunch boxes and quick enough to make for a morning tea shout at work first thing in the morning.

10 mins prep | 45 mins cooking | 10 mins cooling


  • 1/3 c brown sugar
  • 1 tsp cinnamon
  • 2/3 c caster sugar
  • 100 g butter
  • 2 eggs
  • 1 ½ tsp vanilla bean extract
  • 1 ½ c plain flour
  • 2 tsp baking powder
  • ½ c milk
  • 1 apple – peeled and diced small


  1. Pre heat oven – 170’c.
  2. Line a loaf tin with baking paper. Mix in a small bowl the cinnamon and brown sugar.
  3. In a large mixing bowl mix together dry ingredients.
  4. Cream butter and sugar together in another bowl. Add eggs one at a time.
  5. Add dry ingredients, alternating with milk. Stir together.
  6. Place half the mix in the bottom of loaf tin, sprinkle over half the brown sugar and cinnamon mix, and sprinkle over half the apple.
  7. Repeat with remaining ingredients. Take a knife and swirl through slightly.
  8. Bake for 45 minutes test with a skewer. If slightly sticky cook for a further few minutes.
  9. Leave in tin for 10 minutes.
  10. Serve hot with ice-cream or cream, or cold sliced with or without butter.
