Blueberry Coconut Slice


Wow your friends with something a little bit fancy next time they come around for afternoon tea! This blueberry coconut slice is easy to make and tastes like a treat from a cafe - sure to impress!

  • BASE
  • 1 cup self-raising flour
  • ⅓ cup caster sugar
  • ¼ cup coconut
  • 130g melted butter
  • 1 cup blueberries
  • ⅓ cup coconut
  • ¼ cup caster sugar
  • 1 tbsp corn flour
  • 1 egg (lightly beaten)


  1. Preheat oven 180ºC. Line a baking tray with baking paper.
  2. Combine flour, sugar, coconut and melted butter together. Press into base of tin.
  3. Top with blueberries. Combine remaining topping ingredients together and spread on top of blueberries.
  4. Bake for 30-35 minutes.
  5. Cool in tin and then place on cooling rack.
  6. Serve hot with lashings of lightly whipped cream and a dusting of icing sugar. Or let cool and serve cold with a drizzle of lemon water icing.
